将鱼头、鱼尾切下

将脊骨切成小段

将鱼头从当中劈开

将肋骨片下,并切成片,注意尽量不要将鱼刺切断

加料酒,胡椒粉,盐,姜粒,蒜粒,淀粉开始腌制鱼片,至少也要腌半个小时

把绿豆芽过水,其实不过也可以,但为了干净点,我还是稍微过了一下水

倒油,放入干辣椒,花椒炒一下,不要炒太久,要不会糊了

盛上一半的干辣椒跟花椒待用

然后倒入姜,蒜头,鲜辣椒,葱段,还有两勺子的郫县豆瓣酱翻炒几下

倒入水煮开,放点盐

放入鱼骨头,煮10分钟

盛入刚才放豆芽的容器里

然后放入鱼片,煮开,再煮两分钟,不要煮久了,要不鱼肉会由嫩变硬。
